Fresh and floral of honeysuckle, coriander, orange blossom and lavender. Then comes an intense minerality that develops on notes of crushed stone and a resolutely spicy touch reminiscent of gray pepper. Of course, the fruit is still present, with aromas of pear, peach and fresh mango.
On the palate, we find this finesse: there is certainly sap and substance, but the subtle minerality, accompanied by beautiful bitters, precise and refines the wine. It lengthens it, energizes it and makes it particularly tasty. The straightforwardness and persistence of the finish are exemplary: this high-end Saint-Joseph should serve as a model as it brilliantly and naturally combines power and finesse.
Best to accompany a quail with grapes or a risotto with mushrooms.
