Machine harvesting using a destemmer.
Direct pressing in a pneumatic press and cold settling of the must at 6°C.
Alcoholic fermentation at low temperature for up to 15 days, followed by aging on fine lees for about ten months to develop richness and volume on the palate.

Filtration and bottling 15 to 18 months after harvest.

About the winery:
At the crossroads of Berry, Touraine and Sologne, the vineyard extends over 34 hectares in 3 AOPs: TOURAINE – TOURAINE CHENONCEAU – VALENCAY. The vines grow on ancient terraces of the Cher composed of two specific terroirs: clay with husks and clay with flint.
At the helm of the estate since March 2020 and wishing to continue in the same vein, Anne-Sophie and Benoit LAGARDE cultivate the vines with respect for the environment by adhering to the Terra Vitis specifications.
The grapes are harvested at their optimal ripeness and vinified using modern temperature control techniques. Our priority is to extract maximum fruit and just the right amount of tannins for a beautiful structure… so that the wine remains a pleasure.
Roundness and complexity for Valençay, creaminess and power for Touraine, lovely freshness for IGP Val de Loire, light mousse and refinement for the Traditional Method…
