Notes: Intense yellow colour with gold reflections. Very greedy nose with fragrances of apricot and fresh almond. The mouth, with great roundness offers hints of fruits and a nice long finish.
Food Pairing: This wine is surprising as an aperitif, pleasant with tuna tataki or sea bream ceviche, and can also be enjoyed with fresh goat cheese.
Terroir: The soils are characterized by their clay-limestone composition and the presence of rolled pebbles.
Plot selections: The plots are carefully identified in the vineyard, their aromatic profile confirmed by tasting the berries, thus guaranteeing a harvest at optimal maturity.
Vinification: The grapes are harvested from 4 a.m. to 10 a.m. to preserve their freshness and avoid any oxidation. They undergo pressing and careful separation of the presses. The juices are settling. Vinification takes place at a temperature of 16°C, with the use of specially selected yeasts. Then, the wine is racked and aged on fine lees for a period of 2 months.
