The grapes are harvested separately by variety from the oldest plots on the estate. After destemming and crushing, a long maceration of over a month gives this wine its structure and body, and extracts its intense garnet color. Following natural fermentation with indigenous yeasts, the wines are aged for 18 months in oak barrels before being blended in tanks and bottled.
A luminous garnet robe with ruby highlights. The nose is remarkably complex, revealing notes of Burlat cherry and black pepper. Southern notes of garrigue and black olive are also present, along with a subtle touch of vanilla. This is an expressive wine dominated by ripe fruit and spices (roasted mocha, blueberry, and wild blackberry). It has good aging potential with even more promising development.
Lion et Dragon Rouge pairs perfectly with game dishes such as hare stew or veal cheek casserole with asparagus.
