The Persian grapes are harvested in Saint-Jean de la Porte. Persan is an old Savoyard grape variety with ovoid berries, originating from Saint-Jean de Maurienne; the wine-makers have been growing it for 9 vintages already at the estate. The yield is 40 Hl/ha, it is very sensitive to frost and summer grilling.
The Persian is a whole cluster. The maceration time is 12 days approximately. The frequency of pumping over during maceration can be reasoned upon tasting.
The aging of this vintage is done in 300L, 600L barrels and in concrete egg on fermentation lees for 12 months.
This a typical grape variety is surprising with its fruity and spicy nose, between marshmallow and violet flowers with a minty hint. Its freshness in the mouth ensures good length as well as strong potential.
Food Pairing:
Persian can be combined with a tagine, roast pork or with sweet/savory dishes such as apple puddling.
