This Sancerre Rouge Silex comes from a 0.57 ha plot, planted for over 45 years on a clay-siliceous terroir known as “ Silex ”.
This wine exudes aromas of sunny, even jammy fruits (strawberry, blackberry, redcurrant) and fine woody notes . The palate is generous and ripe with substance and melted tannins . The discreet woodiness blends pleasantly with the fruitiness.
Food Pairing: Sancerre Rouge Silex will pair wonderfully with fine meats such as quail or rabbit, but also with a platter of mature cheeses .
Wine-making:
Harvested manually at optimal ripeness, the grapes are meticulously sorted before being put directly into vats. A cold maceration of a few days is carried out, which allows the extraction of aromas and color to begin. Maceration continues for about two weeks, alcoholic fermentation takes place and we carry out regular pumping over, the cap of marc is thus loosened to maintain the exchanges between the grapes and the juice. This technique allows us to obtain a structured and concentrated wine. The harvest is then pressed and the wine is put into oak barrels for malolactic fermentation. It will evolve there for 10 to 12 months before being put en masse into vats for at least 3 months.
Low yields and excellent maturity allow for a high concentration of aromas, ripe tannins and optimal balance.
All our Sancerre Rouges are aged in old barrels , 10 years on average, in order to obtain a good balance between oak and fruit.
