The estate's Marsannays are benchmarks and the demanding 2021 vintage confirms that Laurent Fournier can be counted on in all circumstances. Coming from a terroir located in the far north of the appellation, this wine evokes intense red fruits and blackcurrant on the nose. On the palate, it displays melted and silky tannins that push the finish far.
Food Pairing: Roasted chicken with herbs, Coq au vin or pork.
Wine-making:
• Vinification and aging: Vatting with 50% whole grapes, moderate punching down and pumping over, spontaneous fermentation in indigenous yeasts. Aging in 600 and 228 liter barrels (about 25% new wood) for 12 months. The wines are then blended to be barreled again and aged for 6 months in demi-muids.
