This Ladoix Premier Cru comes from vines classified as Premier Cru, in the Les Joyeuses climate. With a clay-limestone soil, the old vines of pinot fin (qualitative rootstock 161-49) thrive. Planting density is around 10,000 vines per hectare. The yield is controlled, around 40 hectoliters per hectare. The cultivation of the vines is intended to be sustainable, and in respect of the environment.
The harvest is manual and rigorous sorting makes it possible to keep the best berries. The whole harvest is vatted without sulphur, and punching down takes place twice a day for three weeks. The alcoholic fermentation is triggered naturally (indigenous yeasts), without artificial temperature control. The aging lasts for 12 months in Burgundy barrels, on the lees, in reduction (no racking, no riddling, no SO2). 3 months of aging in tuns then soften the wine. During the tasting, this garnet wine reveals notes of small red fruits (raspberries, cherries), flowers (iris, elderflower) and spices (cloves). The palate is unctuous, carried by a perfect balance.
Food pairing: Red meat, poultry and even handle strongly aromatic antipasti and marinated vegetables. It goes well with mild cheeses such as Vacherin, Reblochon or Cîteaux.
