Pairing:
Masculine yet delicate, Fixin displays a tannic structure that complements fine cuts of meat, such as braised pork, well-marbled ribeye steak, poultry stews, and their curried or tandoori variations; but the delicacy of its aromas and finish also lends itself to more creative pairings with paella, tapas , or spring rolls. For cheeses, it appreciates the delicate flavor of Chaource, the fruitiness of Comté, or the robust flavors of Époisses.
Wine-making:
Area: This cuvée is made from two 0.3-hectare plots on the estate, supplemented by the purchase of organically grown grapes from 0.4 hectares.
• Average production: 4,000 bottles.
• Climate: "Les Petits Crais" is located north of the Fixin appellation, bordering the Marsannay AOC.
• Terroir: Situated on a hillside, facing due east, not too hot, with a relatively late ripening period, composed of Lias marl, which behaves almost like sand.
• Grape variety: 100% Pinot Noir, planted between 1960 and 1990.
• Farming: Organic. Soil is worked by plowing, followed by natural cover cropping during the summer.
• Harvest: Hand-picked in small 15 kg crates, with rigorous sorting in the winery. • Vinification and aging: Fermentation with 50% whole grapes,
moderate punch-downs and pump-overs. Fermentation with indigenous yeasts.
Aging in 600 and 228-liter barrels (approximately 25% new oak)
for 12 months. The wines are then blended before being
re-entered into barrels and aged for 6 months in demi-muids.
