Vinification:
This Roussette, (a grape variety also called Altesse) comes from the place called "les
Cailles" located in the commune of Chignin.
Harvested by hand, the pressing is direct, the must is then cold-settling (13°C for 24 hours). We work with indigenous yeasts.
Alcoholic and malolactic fermentation with indigenous yeasts takes place in Austrian oak barrels. The capacity is 600L.
The objective of this vintage is to tame the acidity of this grape variety with a one-year aging on lees in barrels, extended by 6 months in vats. After bottling, the bottles are kept in the cellar for 1 year. The wine is therefore offered with a two-year vintage shift guaranteeing a beautiful complexity.
Tasting & Pairings:
The richness of the nose linked to the aging, reveals aromas of brioche and pastry but also recalls jasmine flower and white-fleshed fruits. On the attack, a beautiful roundness touches your palate, subsequently supported by a tension allowing a good length in the mouth.
Roussette can accompany an aperitif as well as dishes in sauce such as pike quenelles or scallops. Spicy dishes also promise a beautiful combination such as chicken with green curry & Asian cuisine. Fish, seafood, poultry and Savoie cheeses......
