Note:
Light gold color. The nose offers a light vanilla/oak note, with yellow stone fruits, crushed nuts, and some stony notes. On the palate, the profile is elegant, with an invigorating freshness, young fruit flavors, a slight saline note on the finish, and a very nice length.
Food Pairing:
This wine will accompany cooked fish (American-style monkfish, Loire pike with white butter, etc.), but also white meats (veal blanquette, poultry fricassee with cream, etc.), or even slowly matured hard cheeses (high mountain Beaufort, Comté, etc.), goat's cheese, sheep's cheese, etc.
Vinification and aging:
A single-plot cuvée from the "Les Fougeraies" area, it benefits from a hand-picked harvest through successive sorting processes. After a slow, direct pressing, the must is placed directly into oak barrels where fermentation takes place naturally without exogenous yeasts. No additives are used except a little volcanic sulfur. Bottling takes place after 18 months of aging, including 12 in barrels.
