The winemaking process reflects Patrick Piuze’s minimalist, site-focused philosophy. Native yeast fermentation occurs spontaneously, and aging is split 60% in neutral oak barrels and 40% in stainless steel. Importantly, the barrels used come only from cool, high-acid vintages (2002, 2004, 2007, 2008, 2010), ensuring that no tropical or overly sweet notes disturb the wine’s linear and mineral profile. Natural malolactic fermentation adds roundness and textural nuance, without compromising vibrancy.
In the glass, it shines pale straw yellow with greenish glints. Aromatically, it is refined and expressive: lemon-poached pear, green apple, toasted almond, and delicate acacia honey are layered with crushed stone, iodine, and faint sea spray. On the palate, it is electric yet composed—brilliant acidity, marked salinity, and a long, stony finish create a memorable, gastronomic white.
Patrick Piuze, born in Montréal, is a dynamic and rebellious figure in the world of Chablis. Since founding his négociant micro-domaine in 2008, he has championed low-intervention techniques and sustainable farming, sourcing exclusively from small growers and hand-harvesting every vineyard himself. His motto: “I think the monks got it right,” perfectly encapsulates his devotion to terroir above all else.
