Note:
Character healthy and balanced. The wine is complex with aromas of black fruit such as plums and black currants, dried flowers, licorice, cocoa and cedar.
Pairing:
This wine will pair wonderfully with meats such as roast duck, hare stew or even roast wild boar accompanied by grilled oyster mushrooms.
Wine-making:
Vinification The wine is macerated for 30-45 days and ferments in temperature controlled tanks at 28 degrees. The wine undergoes malolactic fermentation in oak barrels. Storage The wine has been stored for 12 months in barrel . Another 24 months in 80 hl of Foudres. The wine is bottled 36 months after storage. For another two years in the bottle.
Cold maceration from 2 to 5 days. Slow fermentation between 22 degrees and 26 degrees for 8 to 10 days. Long maceration from 30 to 45 days.
Age of vines: 50 years; Soil: Fine yellow & white clays resting on cracked limestone.
