Due to its low yield, Sémillon grapes reach full maturity at night before being harvested and destemmed. Natural fermentation begins with indigenous yeasts in 400- and 600-liter French oak barrels at a temperature between 18° and 20°C.
These finest Sémillon juices are then aged on their fine lees, with bâtonnage (lees stirring), for eight months.
This beautiful wine, with its bright, clear, lemon-yellow hue, displays a lovely aromatic intensity. Its tangy character makes it very appealing. Lively and lemony with a touch of richness, it is marked by pleasant aniseed flavors. This white wine opens with juicy notes of pear, candied lemon (tangy), and a hint of flint. On the palate, it reveals a beautiful breadth with a vibrant and flavorful balance. A superb, mentholated finish is punctuated by lovely flavors of ripe white fruit (vine peach).
This delightful wine will perfectly complement a sea bass ceviche, sea bream, or fresh goat cheese.
