Tasting Notes:
From Ballet , one of France's smallest and rarest AOCs
Grown on the appellation's distinctive "poudingue" pebble-and-sand soils. Deep garnet colour with expressive aromas of blackberry, black pepper and spice, sometimes with a touch of violet or liquorice. Medium-bodied with fine, present tannins and a fresh, lively finish — a genuine rarity, as Bellet covers barely 50 hectares in total.
Food pairing:
Western cuisine: Provençal daube, grilled lamb, ratatouille, game meat, wild boar, red mullet, panisses, charcuterie, spicy
Asian cuisine: Char siu pork, five-spice duck, mild Sichuan beef
We then proceed with racking, followed by fining, blending, aging in French oak barrels for a minimum of approximately 12 months, and finally, bottle aging to ensure your satisfaction and enhance your meals.
