Mirmanda white asserts beautiful fruity notes, peach, apricot and fine elegant touches of white flowers, as well as mineral touches brought by the limestone terroir, the whole is ample, complex and balanced, all underlined by a beautiful liveliness, the barrel aging offers a round structure, all in finesse and minerality.
Our choice was to press them delicately, to obtain beautiful juices that will ferment in barrels for the Roussanne and Carignan gris, at low temperature in thermo-regulated stainless steel vats for the Grenache gris and blanc. A 9-month aging in barrels allowed the wine to be gently nourished with its lees, the rest, in stainless steel vats, preserves the liveliness and freshness of the fruits necessary for harmony and together offering great complexity once blended.
Very light filtration at bottling to preserve the integrity of the wine.

Enjoy with seafood like prawns and fish in spicy sauces, as well as ratatouille and cooked shellfish.
