A Premier Cru with deep color and aromas of spice and black fruit; its assertive structure is evident right from the attack, lending the wine impressive length.

Pork & Poultry: Classic roast pork or slow-cooked poultry-based stews like coq au vin.
Asia cuisine: Chinese Roast Pork (Char Siu) or Suckling Pig, Peking Duck, Japanese Shiitake or Maitake Mushroom Donabe (Claypot Rice)
"Clos l’Evêque" Climat
This great Clos—known as "Clos l’Evêque" as early as 1548—once belonged to the Bishops of Chalon. The wine was used for celebrating Mass and also served as the "wine of honor" offered to distinguished guests, such as the king or high-ranking dignitaries.
Mercurey Premier Cru "Clos l’Evêque" comes from a 0.81-hectare estate plot planted with Pinot Noir; the soil is sandy and light-colored at the top of the slope, while the lower section features clay and ochre-hued soil.
Viticulture & Winemaking
"Living soils giving rise to wines that reflect their terroir!"
In response to current climate challenges, we are implementing a responsible, sensitive, and innovative approach to viticulture that integrates concepts from organic farming, agroforestry, and agroecology.
The hand-harvested grapes are sorted and then partially destemmed. Alcoholic fermentation relies on indigenous yeasts. Sulfites are added only after malolactic fermentation. The wine is aged for 14 months in oak barrels. Unfiltered and unfined.
Domaine et Maison Gouffier
Founded in the mid-19th century by Charles de Saint-Rapt, Domaine Gouffier is located in Fontaines,
a village known for its springs situated in wine country, bordering Mercurey and Rully. In the 1950s, Madeleine
Gouffier expanded the estate into Mercurey. Her son Jérôme Gouffier, a naval engineer by training, inherited the property in 1993 and developed the business of selling bottled wines.
A neighbor of the Gouffier family, Frédéric Gueugneau has been writing a new chapter for this historic Côte Chalonnaise estate since 2012, combining estate production with a winemaker-led merchant business.
