TERROIR
This grape variety, originally from Burgundy, has found a new home at 350 meters altitude on the limestone soils of the foothills of the Montagne Noire. This environment allows it to meet its need for climatic freshness, allowing it to flourish and fully express its characteristics.
VINIFICATION
Harvested at the end of September, the partially destemmed grapes were traditionally vinified with punching down and gentle pumping over, with fermentation maintained at 28°C for 3 weeks.
TASTING
Complex nose of red fruits (cherry, strawberry), spices, and violet. The palate is tender and indulgent, with a remarkable balance characterized by silky, liquorice-like tannins.
